Salmon Roll

   _ 15 1/2-ounce can red salmon drained, boned and flaked
   _ 8-ounce package cream cheese softened
   _ tablespoon onions minced
   _ teaspoons horseradish prepared
   _ 1/2 teaspoons lemon juice fresh
   ___ teaspoon salt
   ___ teaspoon liquid smoke (optional)
   ___ cup pecans chopped
   _ tablespoons parsley minced fresh
   Assorted crackers or rye cocktail bread


Place salmon, cream cheese, onion, horseradish, lemon juice, salt and optional liquid smoke in a blender container or food processor bowl; cover and blend or process until almost puréed. Cover and chill.

On a sheet of waxed paper form cheese mixture into a 6-inch log. On a separate sheet of waxed paper mix pecans and parsley. Roll log in this mixture. Cover and chill for at least 1 1/2 hours before serving.

Serve with crackers or bread.
