1 potato large
1 pound ground beef
1/2 cup onions chopped
1 egg beaten
1 teaspoon parsley dried
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon sage dried, crushed
1 cup beef broth
2 tablespoons flour
1 cup milk
6 sprigs parsley
Peel and grate potato (you will need about 1 1/2 cups). Place potato in a medium bowl. Add beef, onion, egg, dried parsley, 1 teaspoon of the salt, 1/4 teaspoon of the pepper and sage. Mix thoroughly and shape into six 1/2 -inch thick patties.
In a large skillet over medium heat, brown patties. Reduce heat to low. Add beef broth. Cover and simmer for 20 to 25 minutes or until potato is tender. Remove patties from skillet and keep warm.
Drain off all but 1/3 cup liquid, removing excess fat. Whisk flour into milk until smooth; stir into liquid in skillet. Stirring over medium heat, bring to a boil and boil until thickened. Stir in remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Pour gravy over patties. Place parsley sprig on each patty and serve.
