6 to 8 slices french bread 1/2 -inch thick day-old or Italian bread
1 to 2 tablespoons butter or margarine, softened
1 tablespoon dried minced onion
1 6-ounce package frozen shrimp cooked, * (optional)
6 ounces sharp cheddar cheese shredded (about 1 1/2 cups)
4 eggs large
1 3/4 cups milk
2 tablespoons dijon style mustard
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon black pepper

Preheat oven to 325°. Butter or spray with non-stick coating a shallow 1 1/2- or 2-quart baking dish.
Spread bread with butter or margarine. Trim crusts off if desired. Cut bread into cubes (you should have about 4 cups). Place half of the cubes in baking dish. Sprinkle with half of the onion, half of the shrimp and half of the cheese. Repeat layers.
In a medium bowl, lightly beat eggs. Stir in milk. Dijon mustard, flour, salt and pepper until smooth. Pour over top of bread mixture, pressing bread under liquid to moisten. Sprinkle with paprika.
Bake for 45 minutes or until top is puffed and a knife inserted near center comes out clean.
