2-Pound Recipe
_ 1/3 cups water
___ cup molasses
_ tablespoons margarine or butter, softened
_ teaspoon grated lemon peel
_ cups bread flour
_ 1/2 teaspoons salt
_ teaspoon ground ginger
___ teaspoon ground cinnamon
_ teaspoon bread machine or quick active dry yeast
Make 1 ½ Pound Recipe with bread machines that use 3 cups flour, or make 2 Pound Recipe with bread machines that use 4 cups flour.
Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
Select Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan, and cool on wire rack.

SUCCESS TIP: We found from our testing that for good texture and volume, slightly less yeast is needed in the 2-pound loaf than is needed in the 1 ½-pound loaf.
DID YOU KNOW? Mild molasses, also known as light molasses, comes from the first boiling of syrup from sugar and or sugar beets. It is lighter in color and flavor. Full molasses, also known as dark molasses, comes from the second boiling and is darker, thicker and less sweet. Either molasses will work in this bread, but the mild molasses will give you a spicier flavor that will not overshadow the ginger and cinnamon.
SANDWICH BOARD: An Open-Face Pear Sandwich is a tasty treat to eat with a comforting cup of steaming tea. Spread a slice of gingery Bread with softened cream cheese, and layer with thin slices of fresh pear. If you are a true ginger lover, try sprinkling some finely chopped crystallized ginger over the top. This sandwich also is good with sliced apples.
