Brandied Turkey with Cheese

Serve turkey a whole new way using quick-cooking turkey breast slices. Serve with sweet potatoes and cranberry sauce.


   _ uncooked turkey breast slices, about 1/4 inch thick (from 1 1/4 pound package)
   ___ teaspoon salt
   ___ teaspoon pepper
   ___ cup all-purpose flour
   ___ cup butter or stick margarine
   ___ cup brandy or chicken broth
   _ thin slices (1 ounce each) Fontina or provolone cheese


1. Sprinkle turkey with salt and pepper. Coat turkey with flour.

2. Melt butter in 12-inch skillet over medium heat. Cook turkey in butter about 2 minutes on each side or until brown.

3. Add brandy. Cook uncovered until liquid has evaporated and turkey is no longer pink in center. Top turkey slices with cheese; remove from heat. Cover and let stand about 2 minutes or until cheese is melted.
