1 1/4 cups brown sugar, packed
1/4 cup water
2 tablespoons light corn syrup
1/8 teaspoon salt
3 egg whites
1 teaspoon vanilla extract or 1/2 teaspoon maple flavoring
Mix brown sugar, water, corn syrup, and salt; bring to a boil and cook to 230°F. Beat egg whites until stiff. Pour hot syrup over egg whites gradually--continue beating. Add vanilla and beat until mixture stiffens to spreading consistency.
