2 tablespoons butter or margarine
1 clove garlic, minced
3 large onions, chopped fine
2 pounds ground beef
1 cup grated carrots
1/4 cup minced parsley
1/4 cup fresh dill weed, minced
5 hard boiled eggs, chopped
Salt and pepper, to taste
Sauté garlic and onions in butter until tender. Add beef and cook until slightly browned. Add carrots, parsley, fresh dill, eggs, salt, and pepper. Cool and drain. Fill empanadas and bake at 400°F for 15 minutes.
