This frosting is excellent for making roses and other flowers, leaves, etc., because they become very hard and hold their shape.
3 egg whites, room temperature
1 (1-pound) package confectioners' sugar
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
Combine egg whites and beat with electric mixer for 7 to 10 minutes or until very stiff. Add sugar, cream of tarter and vanilla.
NOTE: Keep frosting covered at all times with a damp cloth while you are using it. This prevents a crust from forming.
