1 1/4 cups sugar
1 cup evaporated milk or heavy cream
5 squares unsweetened chocolate
1/2 cup butter
1 teaspoon vanilla
Combine sugar and milk in heavy saucepan; bring to boil, stirring constantly. Reduce heat; simmer six minutes without stirring; remove from heat. Add chocolate; stir to blend. Add butter and vanilla; stir to blend. Chill until mixture begins to thicken, Beat until thick and creamy.
