Fresh Pineapple Sherbet

Ingredients

1 cup fresh pineapple, chopped
1 cup pineapple juice
1 cup water
1 cup sugar
1 lemon, juice and grated zest
1 cup whipping cream

Directions:

Combine fresh pineapple, pineapple juice, water, sugar, and lemon zest. Cook five minutes strain. Add lemon juice freeze. Thaw slightly just before serving. Whip cream and add to thawed mixture.
