1 cup fresh pineapples, chopped
1 cup pineapple juice
1 cup water
1 cup sugar
1 lemon, juice and grated zest
1 cup whipping cream
Combine fresh pineapple, pineapple juice, water, sugar, and lemon zest. Cook five minutes; strain. Add lemon juice; freeze. Thaw slightly just before serving. Whip cream and add to thawed mixture.
