2 cups milk
2 cups heavy cream
1 3-inch vanilla bean, split
8 egg yolk
7 tablespoons sugar
4 very ripe bananas
1/4 cup sour cream
2 tablespoons honey
Scald milk, cream and vanilla bean in heavy saucepan. Combine egg yolks and sugar; beat well. Pour some hot milk into eggs; blend gradually; then add eggs to milk mixture. Return mixture to saucepan and cook until thick, like custard--until mixture coats a spoon. Do not allow to boil or it will curdle. Puree bananas, sour cream and honey in food processor. Add to egg mixture. Chill and freeze.
