2 1/2 cups sugar
1 1/2 cups salad oil
3 eggs
3 cups flour
1 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup buttermilk
1 1/2 cups mashed bananas
1 cup coconut
Combine sugar, salad oil, and eggs. Mix flour, baking powder, and salt. Add alternately with vanilla, buttermilk, bananas, and coconut. Bake at 325°F for 1 hour 15 minutes in greased and floured bundt pan.
