Bacon And Swiss Quiche |

Carbohydrate Count: 7g per serving
8 slices bacon cut into 1-inch pieces, fried crisp, and drained
2 cups half and half
1 1/2 cups swiss cheese grated natural
1/2 teaspoon salt
1/4 teaspoon nutmeg ground
1/4 teaspoon paprika
Hot pepper sauce to taste
4 eggs lightly beaten
3 to 4 green onions sliced, including some tops

1. Sprinkle bacon evenly over bottom of pie tin.
2. In heavy saucepan heat heavy cream; add cheese and stir until melted. Season with salt, nutmeg, paprika, and hot pepper sauce to taste. Pour 1/2 cup mixture into beaten eggs, stirring constantly. Slowly stir this mixture back into hot mixture, and add green onions.
3. Pour into pie shell. Bake at 325° F for 35 to 45 minutes. Quiche is done when knife inserted 3 inches from edge comes out clean.
