Sausage-Stuffed Acorn Squash

Ingredients

2 squash acorn, medium
1/8 teaspoon salt
1 (12-ounce) package pork sausage
1 cup mushrooms sliced
1/2 cup celery thinly sliced
1/4 cup green onion, thinly sliced
1/2 cup sour cream dairy
1/4 cup Parmesan cheese
1 egg

Directions:

Cut acorn squash in half remove seeds. Place squash cut side down in 12x8-inch baking dish. Bake at 375 degrees F. for 45 minutes or until just tender. Turn squash cut side up season with salt. In meantime, in large skillet, combine sausage, mushrooms, celery, and onions. Cook until tender drain well. In small bowl, combine remaining ingredients blend well and stir into sausage mixture. Spoon evenly into squash halves continue to bake for 20 to 25 minutes longer or until thoroughly heated.
