To extend stuffing to fill 6 squash halves, add 1 to 1 1/2 cups cooked white or brown rice to sausage mixture.
_ squash acorn, medium
___ teaspoon salt
_ 12-ounce package pork sausages
_ cup mushrooms sliced
___ cup celery thinly sliced
___ cup green onions, thinly sliced
___ cup sour cream dairy
___ cup parmesan cheese

Cut acorn squash in half; remove seeds. Place squash cut side down in 12x8-inch baking dish. Bake at 375 degrees F. for 45 minutes or until just tender. Turn squash cut side up; season with salt. In meantime, in large skillet, combine sausage, mushrooms, celery, and onions. Cook until tender; drain well. In small bowl, combine remaining ingredients; blend well and stir into sausage mixture. Spoon evenly into squash halves; continue to bake for 20 to 25 minutes longer or until thoroughly heated.
