Wipe the meat dry with a cloth and tie with a string to make a compact piece. Place brisket in a large heavy pot and cover with cold water. Bring water to a boil, reduce heat and simmer for 3 1/2 hours or until the brisket is tender. Add more water if necessary to keep brisket covered.
Cook the beets, peel and keep hot.
Cook the potatoes, cut them half, keep hot.
Twenty minutes before brisket is cooked, add carrots and onions. Cook them with the brisket.
Remove the brisket from the pot, keep warm. Add cabbage to the liquid and vegetables in the pot. Cover and simmer for 15 minutes.
Salt the potatoes and beets, then pour melted butter over them. Slice the meat in thin slices, place in the center of a large platter. Surround the meat with the vegetables.
