3 eggs white
1 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla extract
20 round buttery crackers finely crushed
1 cup pecans chopped
Beat egg whites until stiff. Very gradually beat in sugar. Fold in baking powder and vanilla, then fold in crackers and nuts. Put in a greased 9" pie pan. Bake at 350° for 25 minutes. Top with sweetened whipped cream and chill for at least 3 hours or omit the whipped cream and top with vanilla ice cream.
