Bananas Foster

Serves: 2

   * See note below.
   2 tablespoons brown sugar
   1 tablespoon butter
   1 banana large, ripe cut in two, then sliced lengthwise
   Dash cinnamon
   1/2 ounce banana-flavored liqueur
   1 ounce white rum
   2 scoops vanilla ice cream


* This is a fun thing to do at the table if you have a flat chafing dish. Otherwise it can be done in a skillet on the stove over medium heat. Melt brown sugar and butter in chafing dish. Add banana and sauté until tender. Sprinkle with cinnamon. Pour the banana liqueur and rum over all and flame. Baste with the warm liquid in the pan until flame burns out. Serve immediately over ice cream.
