Philly Beef Sandwiches

   2 tablespoons butter or margarine
   1 medium onion, coarsely chopped (1/2 cup)
   1 1/2 cups sliced mushrooms (4 ounces)*
   1/3 cup chopped green bell peppers
   4 kaiser rolls, split
   3/4 pound thinly sliced cooked roast beef
   4 slices (1 ounce each) provolone cheese


1. Melt butter in 10-inch skillet over medium-high heat. Cook onion, mushrooms and bell pepper in butter about 5 minutes, stirring occasionally, until vegetables are tender.

2. Set oven control to broil. Place bottom halves of rolls on ungreased cookie sheet. Top with vegetable mixture, beef and cheese. Broil with tops 4 to 6 inches from heat 2 to 3 minutes or just until cheese is melted. Top with tops of rolls.

*1 can (4 ounces) sliced mushrooms, drained, can be substituted for the fresh mushrooms.

Beef is an important source of iron, and cheese is an important source of calcium. Combined in this recipe, they give you an excellent source of both nutrients. Following a low-residue diet? Just omit the mushrooms, bell pepper and cheese.
