Makes about 1 1/3 cups
A Weber classic that's been around the block-party a few times. Great on Kansas City-style pork ribs, chicken, and beef. Brush it on during the last 20 minutes of grilling. Makes about 1 1/3 cups.
_ tablespoons unsalted butter
___ cup finely chopped celery
_ tablespoons finely chopped yellow onions
_ cup ketchup
_ tablespoons fresh lemon juice
_ tablespoons granulated sugar
_ tablespoons cider vinegar
_ tablespoon Worcestershire sauce
_ teaspoon dry mustard
Freshly ground black pepper
In a medium sucepan over medium-high heatm melt the butter. Add the celery and onion and cook for 2 to 3 minutes, stirring occasionally. Add the remaining ingredients and whisk together. Bring to a boil, reduce heat, cover, and simmer for 15 minutes, stirring occasionally.
Transfer to a bowl, cover with plastic wrap, and refrigerate until ready to use.
