Makes about 2 cups
Simple and straightforward. Spoon it over grilled fish. Add it to a taco. Or sit it next to a steak. Just make sure the tomatoes are ripe! Place the chopped onion in a colander and rinse it under cold water to crisp it up and mellow the flavor.
_ 1/2 cups finely chopped ripe tomatoes
___ cup finely chopped white onions, rinsed under cold water and fully drained
___ cup finely chopped green bell peppers
_ tablespoons finely chopped cilantro
_ tablespoon fresh lime juice
_ to 2 teaspoons minced jalapeño peppers, with seeds
___ teaspoon ground cumin
___ teaspoon kosher salt
___ teaspoon freshly ground black pepper
In a small bowl combine the ingredients and mix well. Allow to stand for 10 minutes so all of the flavors can blend. It is best served fresh and at room temperature.
