Wear glasses when mincing the habaneros--they're extremely hot. Serve with the pork dish "Caribbean Tenderloin."
___ cup vegetable oil
_ tablespoons fresh lime juice
_ teaspoons ground cumin
_ teaspoon red wine vinegar
_ (15-ounce) can black beans, rinsed and drained
___ cup finely diced yellow bell pepper
___ cup finely diced red onions
___ cup finely diced tomatoes
___ cup finely chopped green onions
___ Habanero or Scotch Bonnet red chili pepper, stemmed, seeded and minced
_ teaspoons minced garlic
_ tablespoon finely chopped fresh basil
Vegetable oil
TO MAKE THE SALSA: In a medium bowl whisk together the vegetable oil, lime juice, cumin, vinegar, and 2 teaspoons of the rub. Add the remaining salsa ingredients. Mix, cover, and allow to stand at room temperature for about 2 hours.
