Makes 1 1/2 tablespoons
People who really like pepper prefer it freshly cracked and not too finely ground. This rub's for them. Start with whole peppercorns, add a team of like-minded spices, and you've got a killer beef or pork rub.
_ teaspoon whole black pepper
_ teaspoon mustard seeds
_ teaspoon paprika
___ teaspoon granulated garlic
___ teaspoon kosher salt
___ teaspoon light brown sugar
___ teaspoon cayenne pepper
Using a spice grinder or mortar and pestle, crush the black peppercorns and mustard seeds. Transfer to a small bowl and combine with the remaining ingredients. Press the rub into both sides of the meat and refrigerate for one hour or more prior to grilling to intensify flavors.
