Makes about 1/2 cup
The mainstay of any tapenade is black olives, although the name comes from "tapeno," the Provencal term for capers, another key ingredient. Spread it on grilled bread, meat, or poultry for a salty flavor boost.
___ cup pitted black olives such as Kalamata or other imported olives
_ anchovy fillets (oil-packed), drained
_ tablespoons coarsely chopped shallots
_ tablespoons extra-virgin olive oil
_ tablespoon fresh lemon juice
_ tablespoon capers drained
_ teaspoon minced garlic
___ teaspoon freshly ground black pepper
In a food processor combine the ingredients and process to make a spreadable paste. Cover and refrigerate for up to 1 week.
