_ whole lemons
_ teaspoons kosher salt
_ teaspoons freshly ground black pepper
Preheat oven to 200°F.
Using a vegetable peeler, cut strips of zest from the lemons, leaving the white, bitter pith still attached. Place the lemon zest on a baking sheet and roast in the oven until dry and golden, 30 to 45 minutes. Allow to cool.
In a spice grinder, pulverize the dried lemon zest. Transfer to a small bowl and mix together with the salt and pepper. Use immediately or store in a tightly covered jar for up to 3 to 4 weeks.
