Makes about 1/4 cup
This stuff is so heady you might be tempted to dab a little behind your ears. But save it to spoon over a sizzling steak or smear on grilled bread.
_ large head garlic
_ teaspoon extra-virgin olive oil
_ tablespoons unsalted butter, softened
_ teaspoons Dijon style mustard
_ teaspoon Worcestershire sauce
___ teaspoon kosher salt
Remove the loose, papery outer skin from the head of garlic. Cut about 1/2 inch off the tip to expose the cloves. Place on an 8-inch square of heavy-duty aluminum foil and drizzle the olive oil over the top of the cloves. Fold up the foil sides and seal to make a packet, leaving a little room for the exspansion of steam. Grill over Indirect Medium heat until the cloves are soft, 30 to 45 minutes. Remove from the grill and allow to cool.
When cool enough to handle, squeeze the garlic from the individual cloves into a small bowl. Using the back of a fork, mash the roasted garlic tgogether with the remaining ingredients. Refrigerate until ready to serve.
