1 tablespoon shortening or oil
2 cups sliced mushrooms
2 cups celery, sliced on an angle
1 cup onions, sliced
1-1/2 cups carrots, sliced thinly on an angle
1 pound green beans
1 green or red bell pepper, sliced
1-1/4 cups beef broth
1-1/2 tablespoons soy sauce
2 tablespoons cornstarch
Water
In cooker, saute mushrooms, celery, and onions in heated oil until tender-crisp. Add remaining ingredients; stir well. Lock lid and bring up to full pressure. Reduce heat to maintain pressure; cook for 2 minutes. Quick-release pressure. Combine soy sauce and cornstarch with a little water until smooth. Return open cooker to heat and stir in cornstarch mixture. Cook, stirring constantly, until thickened.
