Creamed Spinach with Bacon


Serves: 5
Total Calories: 60

Ingredients

2 slices bacon
1/2 cup diced onion
2 bunches fresh spinach
1/4 cup water
1/4 cup cream

Directions:

Clean spinach, cut off stems and rinse well. Gather leaves in a bunch and slice in half. In the pressure cooker, fry bacon and Remove from cooker. Brown onion in remaining bacon fat. Add spinach and water stirring well. Lock the lid in place and bring up to pressure. Immediately remove from heat and use quick release method. Use quick release method to remove lid. Gently stir in cream to coat spinach and crumbled bacon.
