Herb Roasted Potatoes


Serves: 4

Ingredients

2 tablespoons olive oil
1 medium onion, diced
8 medium red potatoes, scrubbed, quartered
1 teaspoon Italian seasoning
1/4 cup water

Directions:

Heat oil over medium heat in pressure cooker. Saute onion until tender. Add potatoes and cook, turning to brown sides evenly. Add water. Bring to a boil. Lock lid and bring to full pressure. Reduce heat and maintain pressure. Cook for 5 minutes. Remove from heat and allow heat to drop naturally.
