Hot and Spicy Collard Greens

Ingredients

2 tablespoons butter or margarine
2 tablespoons finely chopped onions
1-2 teaspoon grated ginger root
2 pounds collard greens, , coarsely chopped
1 serrano chile, seeded and finely chopped

Directions:

1. Melt butter in Dutch oven over medium heat.

2. Add remaining ingredients. Cook, stirring frequently, about 10 minutes or until onion and greens are tender drain.
