Say olé! Put on some mariachi music and turn your dinner into a meal with south-of-the-border flair. Use tortilla baskets for fun salsa holders. They're easy! For each basket, invert a 6-ounce custard cup on a cookie sheet, and spray with nonstick cooking spray. Place one 8- to 10-inch flour tortilla over each custard cup. Bake at 400° for 5 to 8 minutes or until crisp. Remove from the custard cups and cool. The best part about these baskets is that you can eat them!
Bell pepper nachos
Rotisserie chicken
Slices of tomatoes and avocados
Hot cooked rice
Toasted Bananas
For Bell Pepper Nachos
Sprinkle shredded mozzarella or Monterey Jack cheese over slices of green, red and yellow peppers; pop in the microwave to melt the cheese.
For Rotisserie Chicken
Serve with a side of chunky salsa-the hot one if you dare!
For Slices of Tomatoes and Avocados
Drizzle with olive and sprinkle with salt and pepper.
For Hot Cooked Rice
Sprinkle with chopped fresh cilantro.
