Italian “Carne Pane” (Meatloaf)

Ingredients

1/3 cup olive oil
1 cup chopped onion
1 cup chopped sweet Italian peppers
7 garlic cloves , minced
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon Sweet Italian seasoning
1 pound Italian sausage
1 pound lean ground beef
1 teaspoon salt
1 teaspoon black pepper
1/2 cup spaghetti sauce
3 eggs , beaten
1/2 cup Italian-style bread crumbs
1/2 cup grated Italian Parmesan cheese
1/2 cup Italian tomato , drained, or 1/2 cup dried tomatoes
mozzarella cheese , shredded

Directions:

In a large non-reactive skillet, warm olive oil over medium heat. Add onions, sweet pepper, green peppers, garlic, basil, oregano, thyme, and Italian seasoning; cover and cook 10 minutes, stirring once or twice. Remove from heat and set aside to cool.

Preheat oven to 350°. Meanwhile in large bowl, combine Italian sausage, ground beef, salt, pepper, spaghetti sauce, eggs, bread crumbs, Parmesan cheese, and tomatoes, and mix thoroughly. Combine onion-seasoning mixture and mix. Place in meatloaf pan and top with mozzarella cheese.

Bake meatloaf for about 1 1/2 hours at 350°, or until an instant-reading thermometer inserted into center of loaf registers 160°. Let meatloaf rest on a rack for 10 minutes before slicing.

Note: May wish to drain fat by removing meatloaf from baking dish.
