Carnitas Tamales (shredded pork)

Ingredients

1 pound boneless pork shoulder roast
1 tomato, chopped
1 onion, small, quartered
1 carrot, cut into 1-inch chunks
1 celery stalk, cut into 1-inch chunks
1 tablespoon chili powder
1 teaspoon salt
1/4 teaspoon cumin seed
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1 clove garlic, crushed
1 bay leaf

Directions:

Put all ingredient in a pot and simmer until pork is tender. Remove bay leaf. Reserve 2 cups of broth for Carnitas Tamales (tamale dough).
