This is my fresh version of the popular Venezuelan drink.
1 cup cubed fresh pineapples
1 tangerine, peeled and segmented
1 apple, cut into eighths
1 peach, pitted and quartered
1 1/2 teaspoons superfine sugar, or to taste
1/8 teaspoon Angostura aromatic bitters
1 cup champagne or sparkling apple cider
Alternate adding the pineapple, tangerine, apple, and peach to the juicer, and process until juiced. Transfer the juice to a pitcher, and add the sugar, bitters, and champagne or cider. Mix lightly. Pour the juice into two chilled wineglasses and garnish the rim of each with a wedge of pineapple, if desired.
