_You Say Tabbouleh, I Say Tabouli

It’s confusing, but whether you call it tabbouleh, tabouli, bulgur, bulgar, bulghur, or burghul, it’s all the same stuff. Bulgur is not a variety of wheat but a way of processing wheat. Bulgur is wheat that has been cleaned, parboiled, dried, and ground into particles. Often confused with cracked wheat, bulgur differs in that it has been precooked, and therefore needs only to be soaked or cooked briefly. Bulgur is prepared similarly to couscous, but because it is a whole grain, it is more nutritious. It can be used in many of the same dishes in which you would use couscous or rice.
