_How Do You Know When The Fish Is Done? |

However you cook fish, beware of flaking. A fish is not perfectly cooked when you can see its flesh flake. It is overcooked. Flaking occurs when the membrane that supports the muscle fiber of a fish breaks down. When this happens, any juices held within these membranes will run out, leaving the fish hopelessly dry. When properly cooked the surface of a fish will still look smooth (meaning that the membranes are still intact), but it will break into flakes at the slightest pressure. A good rule of thumb is to cook fish for 8 minutes per inch of thickness, regardless of the cooking method.
