White beans come in a variety of sizes: pea, navy, Great Northern, and cannellini. Pea beans (small and round) are the classic choice for baked beans; navy beans (a little bigger and oval) are commonly used in soups; Great Northern beans (about the size of pinto beans or small kidney beans) are the ones in a classic cassoulet and in many stews, and cannellini beans (large, meaty, and kidney bean shaped) are often braised with meats, poultry, or fish. Dried white beans are medium-hard and require about an hour of simmering to become tender. All sizes of white beans are available precooked in cans; all they need is to be rinsed, drained, and heated through.
