We cook in a world where speed is confused with ease, but for each of us what is easy to cook changes depending on the occasion, who we're cooking for, and what else is going on in our lives. To that end I never ask you to chop, or roll, or simmer an ingredient that you can purchase prepared, providing that what you buy is of similar or better quality than what you would cook yourself. I have made sure that when I ask you to do something elaborate, like create a special pastry, or idiosyncratic, like bake a cheesecake overnight, the results are worth your effort and time.
In all of the recipes contained in these pages, I have taken care that the combination of fresh and prepared ingredients always gives you meals that taste as though they were made from scratch by you in your kitchen, even though some of the heavy lifting has been accomplished elsewhere by food manufacturers.
