Open-Faced Tuna Melts

Ingredients

1 (7-ounce) can tuna, packed in water
2 tablespoons mayonnaise, diet
2 tablespoons lemon juice, fresh
2 tablespoons cottage cheese, low-fat
2 teaspoons Dijon style mustard
2 tablespoons red onions, finely minced (optional)
4 slices bread, fresh whole grain, toasted
4 slices tomatoes, fresh, (optional)
1/2 cup American cheese or cheddar cheese (grated)

Directions:

Open-Faced Tuna Melts
1. Drain tuna. Flake with a fork.
2. Combine next 5 ingredients and mix into tuna.
3. Spoon equal amounts on each slice of bread. Top with tomato and 2 tablespoons cheese each. Broil in toaster oven or broiler until cheese bubbles.
