Open-Faced Tuna Melts

Serves: 4

   _ 7-ounce can tuna, packed in water
   _ tablespoons mayonnaise, diet
   _ tablespoons lemon juice, fresh
   _ tablespoons cottage cheese, low-fat
   _ teaspoons dijon style mustard
   _ tablespoons red onions, finely minced (optional)
   _ slices bread, fresh whole grain, toasted
   _ slices tomatoes, fresh, (optional)
   ___ cup american cheese or cheddar cheese (grated)


Open-Faced Tuna Melts
1. Drain tuna. Flake with a fork.
2. Combine next 5 ingredients and mix into tuna.
3. Spoon equal amounts on each slice of bread. Top with tomato and 2 tablespoons cheese each. Broil in toaster oven or broiler until cheese bubbles.
