1 pound northern beans, dried
Water, cold
1/2 cup Center-cut Chopped Ham, chopped, (bone, fat, and skin removed)
1 cup onions, chopped
6 ounces tomato paste
1 teaspoon salt
2 tablespoons dijon style mustard
1 tablespoon white vinegar
2 tablespoons molasses, blackstrap
8 packets artificial sweetener (equal to 1/3 cup sugar)
1. Wash and sort beans. Add color water, cover, and soak overnight.
2. The next day, drain and cover with fresh cold water. Bring to boil and simmer for 30 minutes. Preheat oven to 250ºF.
3. Drain and reserve bean liquid. Mix beans with remaining ingredients and place in a covered baking dish.
4. Bake 6-9 hours in oven or use a crock pot on low setting. Add reserved bean water if they become dry. Uncover for the last hour of cooking.
