_ cups tomato juice
___ cup onions chopped
___ cup celery leaves, chopped
_ tablespoons brown sugar
___ teaspoon salt or to taste
_ teaspoon basil crushed
_ envelopes gelatin unflavored
___ cup water cold
_ tablespoons lemon juice
_ cup celery
In large saucepan, combine tomato juice, onion, celery leaves, brown sugar, salt, and basil; simmer 5 minutes. Strain. Soften gelatin in cold water; add to hot juice along with lemon juice; stir until dissolved. Chill until partially set, about 1 hour. Stir in celery. Pour into 8- or 9-inch square dish or pan, or into 5-cup ring mold and fill center with Shrimp Salad or Cole Slaw (recipes in this cookbook).
