Three Fruit Chicken Salad

Serves: 4

   1/2 cup mayonnaise real
   1/3 cup sour cream
   1 teaspoon sugar
   1 teaspoon lemon peels grated
   1 tablespoon lemon juice fresh
   1 teaspoon ginger minced fresh or 3/4 teaspoon ground ginger
   Salt to taste
   2 apples red, cored and diced
   1 cup green seedless grapes or 1/4 cup white seedless raisins
   2 cups cantaloupes peeled cubed
   2 cups chicken cooked cubed
   Lettuce, washed and crisped
   1/3 cup almonds slivered, browned in real butter


Blend mayonnaise, sour cream, sugar, lemon rind and juice, ginger, and a sprinkling of salt. Add apples, grapes or raisins, cantaloupe, and chicken; toss gently until well coated. Serve on bed of lettuce and garnish with browned almonds.

Note: Instead of adding cantaloupe to salad, slice peeled whole cantaloupe into rings; seed and spoon salad over ring for each serving.
