1 1/2 cups mayonnaise real
1/3 cup milk
1 teaspoon curry powder
2 bananas sliced diagonally
Fresh lemon juice
Lettuce Leaf washed, crisped, and torn into bite size pieces
2 cups white rice cooked long-grain, chilled
1 16-ounce can red salmon chilled, drained, deboned, and flaked
1 4 1/2-ounce can shrimp tiny, chilled and drained
1 green bell pepper large, cubed
3/4 cup carrots pared and shredded
2 apples unpared, cored, and cubed
In small bowl, blend mayonnaise, milk, and curry powder; chill. Toss bananas with lemon juice. Edge a shallow serving bowl with lettuce. Arrange bananas, rice, salmon, shrimp, green pepper, carrots, and apples in bowl. Just before serving, toss lightly. Serve each plate with tossed lettuce and salmon mixture. Pass the dressing separately.
