1 tablespoon unflavored jello
1/4 cup pineapple juice canned
2 cups cottage cheese creamed
1/8 teaspoon salt
1 cup pineapple chunks canned
1 cup strawberries fresh, washed, hulled, and sliced
2 tablespoons honey
1/2 cup sour cream
Lettuce, washed and crisped
Sprinkle gelatin over pineapple juice; dissolve over low heat, stirring. Pour into blender or food processor; add cottage cheese and purée. Turn into bowl; add salt. Fold in fruits, honey, and sour cream. Turn into a rinsed 1 1/2 -quart ring mold and chill until firm. Unmold on lettuce.
