3 cucumbers medium, peeled, leaving some green skin
1 tablespoon salt
1 red onion small, quartered and thinly sliced
Dressing:
1/3 cup sour cream
2 tablespoons sugar
3 tablespoons white vinegar
Thinly slice cucumbers; add salt. Toss and place in refrigerator for 1 hour. Rinse well and drain cucumbers; add onion. Blend sour cream, sugar, and vinegar until smooth. Pour dressing over all. Toss and chill for 4 hours. Serve cold.
