1 apple tart, pared, cored, and sliced
1/4 cup bacon drippings
1 cabbage medium head white or red cabbage, shredded
1 tablespoon caraway
3 tablespoons cider vinegar
1 cup chicken broth
1 tablespoon sugar
Salt to taste
In a large saucepan sauté apple in bacon fat until tender. Add cabbage and caraway seed; sprinkle with 1 tablespoon vinegar; add broth. Cover and simmer until cabbage is tender, stirring occasionally. Add water if necessary. Add sugar, remaining 2 tablespoons vinegar, and salt to taste.
