3 yams large, unpared
Salt to taste
3/4 cup brown sugar
6 tablespoons butter real
3 tablespoons orange juice concentrate
Cook unpared yams in boiling water until tender. Remove from water; let cool. Pare and slice into 1/4 -inch slices. Arrange slices in a heavy skillet. Sprinkle with salt to taste. Spread brown sugar over yams; dot with butter and pour orange juice over top. Cover and heat over medium heat until hot and syrup has thickened.
