1 1-pound 8-ounce bag frozen hash brown potatoes hash brown potatoes with onions
1/2 cup green onions chopped
2 tablespoons parsley minced fresh
1 cup sharp cheddar cheese shredded
1/2 teaspoon salt
Freshly ground pepper to taste
3 tablespoons butter or margarine
Heat oven to 350° F. Cover potatoes with boiling water; let stand 5 minutes. Drain thoroughly. Combine onion and parsley. Layer 1/2 each of potato, onion-parsley mixture, and cheese in ungreased 8-inch square baking dish. Season with salt, pepper, and 1 1/2 tablespoons butter or margarine. Repeat layer with remaining ingredients. Bake for 20 minutes, covered, and 10 minutes, uncovered.
