Dissolve yeast in potato water with 1 teaspoon sugar and ginger let set until foamy, 5 to 10 minutes. Combine starter, egg yolks, milk, 1/2 cup sugar and 3 cups flour beat well. Add lard, salt, yeast mixture and 3 cups flour stir and add more flour to make a stiff dough. On a well-floured surface, knead lightly, divide and use for Caramel Cream Rolls cinnamon rolls or as desired.
