Combine celery, pickle, mayonnaise (or salad dressing), and seasonings. Add salmon (canned salmon may be used) and toss lightly. Serve on salad greens with additional mayonnaise, if desired, and a wedge of lemon.
Salmon Salad Sandwiches: Butter 8 slices bread. Spread salmon salad mixture on four slices top with lettuce cover with remaining bread slices.
