Macaroni And Cheese

1 1/2 cups macaroni
1 teaspoon vegetable oil
4 tablespoons butter real
3 tablespoons flour
2 cups milk
8 ounces American cheese sharp processed, cubed
Salt and freshly ground pepper to taste
1/4 cup cracker crumbs, saltine


Heat oven to 400° F. Cook macaroni in lightly-salted boiling water until nearly tender. Drain, mix with vegetable oil, and set aside. In a medium saucepan melt 3 tablespoons butter add flour and stir 3 minutes. Add milk and cook mixture over medium heat until smooth and thick. Remove from heat add cheese and blend until all cheese has melted. Season with salt and pepper. Pour sauce over macaroni and mix until just barely coated. Pour mixture into greased 1 1/2 -quart casserole. Sprinkle with cracker crumbs and dot with remaining 1 tablespoon butter. Bake for 30 minutes or until top is golden and macaroni is piping hot.
